It depends on the time signature. If it's 4/4 then it is one. If it's 3/4 then one. 6/8 is two. 2/2 is a half. 2/4 is one. Those are the usual time signatures. If you have something else then email me. Whatever note is on the bottom is the one that gets the beat. Like in 4/4 the quarter note gets the beat and 6/8 the eighth note gets it and 2/2 the half note gets it.

Having only a fine singing voice and absolutely no education in music whatsoever beyond choral singing by ear, I'd venture a guess that if a full note has four beats, then a 1/4 rest would be 1 beat? Just mathmatical logic. Am I right?

That depends on the time signature of the piece you are playing...
in 4/4, a quarter rest gets one full count, but in cut (or 2/2) it gets one half count for example.
