There are a number of good books that explain the different forms of engagements, however you'll typically find that the SFA (Standard Form of Agreement) or variations of the SFA is used.

Look up references such as Architect's Legal Handbook by Speaight & Stone (Architectural Press), the Architect's Job Book by Sarah Lupton (RIBA Publishing) and the Architect in Practice by David Chappell & Andrew Willis (Blackwell). Also find the actual engagement form on the RIBA Bookshop via the link below. Note that the SFA99 is about to be revised, but the gist of it should remain about the same so you'll get a good feel of it with SFA99 just fine. Just remember that different commissions often call for variations of that form of engagement, with terms and clauses added or taken out.
