How can you even think about making a suitability determination based on ethnic group? Being Mexican or Pakistani does imply any kind of qualifications for night auditor, nor does it suggest anything against either candidate. Do not hire or reject either one based on where they or their family came from. To do so would make no business sense for you.

depends on their work experience, experience in auditing, experience in working in a hotel, and in their training and education. Then you'd determine by checking their criminal history, prove out their education and where they're from (making sure their resume has integrity), and then make sure they are legal to work in the USA (if your hotel is in the USA). Make sure they have a phone where you can reach them, and they have a place to live that you can verify. If available you can check if they have a credit report on file. And be sure they have transportation (car, bus, etc.). Any employment application asks for references (check those). Any insurance they get they would have to list a beneficiary. Who is the most suitable? The most qualified.
