I would nominate Issac Asmov, who in his lifetime published over 400 books. SciFi, mystery, science, poetry (ok limericks - but they are a form of poetry, right?) and more.
Beethoven did not produce that much. 9 symphonies and one opera compared to Mozarts 41 symphonies and a couple dozen operas.
But they are both beat by JS Bach, who produced original music for church services every Sunday for over 30 years, in addition to hundreds of popular tunes, fugues, and musical training songs. He would beat Beethoven by miles.
