To apply for teaching assistant/ LSA positions as a fully but newly qualified teacher as I cannot find a teaching position. Is it likely to count for or against me in the long run?

Yes it is a good idea. I'm a teacher and one of the other teachers at my school wanted some more experience of working with children after she finished her training. She worked in our school as a one to one for a SEN child for a while and then as a general teaching assistant. Now she is teaching her second class and is glad she had the extra experience.
Obviously she has been lucky that a teaching position came up at our school as well.

Yes, go for it. But what a waste of your qualifications.
How come you can't find a teaching job? Last I heard they were crying out for teachers. Have you tried doing supply teaching. There are agencies which will take even if you have not yet completed your NQT year. This way you get experience actually teaching until you can find a full time teaching post.
Try the following agencies: I'm not sure of their websites, but type them into google.

Select Education
Timeplan Teachers
Protocol Teacher Recruitment
Teaching personnel

There are many more, but I've had experience with these and they are pretty good.
