How about framed pictures of you two together, sharing good times? I loved that when my BF did that for me.
Does she have other more specific interests? Give her something specific to what she likes. If she likes movies, rent a few, buy some popcorn and sit for a marathon of movies together.
If she likes to go out, find out where she'd want to go - bowling, mini-putt, swimming...lots of things.
As with the person who said "give her your friendship", i agree. One of the best gifts you can give is yourself and time with you.

Take her out to dinner or maybe buy her a gift certificate to a spa I love when my huband gets that as a gift for me
