I recommend a stereo system with 200 Watts per channel. Will you need monitor speakers? That might bump it up to 250 Watts. Plan for at least 12 inputs and preferably 16 inputs for the mixer. In the event someone uses an condenser mic, the mixer ought to have at least a couple of inputs with phantom power.

(A new mic was given to me and I couldn't get it to work with my mixer, so I sent it back to the company. It came back and still wouldn't work. I called the company and the representative gently explained that it was a condenser mic and needed phantom power... DOH!)

Well the obvious answer in part is one with about 12 channels to accomodate all the instruments properly. Second part is depends on the size of the venue and the people playing there. If its just a small pub then you wouldnt need a massive one anyway. 300w would be alright I think.
