My wife and I are organic growers, using only one-half acre of land to operate a 12-member CSA program and also sell at a weekly farmer's market.
First, keep it simple. That is, the less overhead and time spent gardening, the higher your profit margin.
Avoid expensive purchases like tractors. Rent a rototiller instead. Apply heavy layers of mulch...reduces weeding and watering needs, and returns organic matter into soil.
Determine what varieties of produce generate the highest return for the work and investment. Any "niche" product like micro-veggies are a winner. Herbs like organic basil go for $15 per pound on the wholesale market, and can also be made into pesto as a value-added product.

No matter what you do, never give in to the pressures of agro-chemicals, GMO's, or hybrid crops. Nothing but troubles down that road.
