I always have something ready in my back pocket when I get into situations like these. Think of the last time you genuinely had to cut out on people, even if you wanted to be there. You are talking with friends, then all of the sudden you remember an appointment or something. Apply that reality to when you are with that person you want to ditch.

Excuse yourself and don't give them a chance to say much. You'll have to make up a little white lie, but you'll get out of your predicament. Tell them that you're sorry you have to interrupt them and wish you didn't have to, but you really need to find a quite place to make an important phone call. Or tell them you really need the bathroom. Whatever it is, the trick is to get out of there before they have a chance to give a lengthy response.

I wear my watch all the time just in case. Then, if I get bored I'll look at my watch and say, "Oh my gosh! Why didn't you tell me what time it is?! I've got to go to class. Bye!"

Then I walk away before they can say anything back to me. I know it's rude, but I always get away with it.

I say "I would love to sit and chat but your a total -*****/ idiot/ bore/ downer/ jerk- whichever fits. Then I get up and leave.
To do it politely I say "We will have to finish this later I have something I need to attend to" and leave quickly.... to the rest room, drive off, to the kitchen, to your children, whatever is convenient.

Tell them you dont care and that you cant stay focused on what theyre saying, then just leave - what do you have to lose .. (and it will make you feel really GOOD) :)

Make an excuse to leave. But make it good if they're smart so they won't suspect anything. Be like, OH **** *excuse here*. ;)
