Every Operating System (OS) has its cons and pros. I would look at each handheld device that you are interested in, consider its features, and try it. Some devices tend to take better, more full advantage of its operating system than other devices.
I prefer the Palm-based handheld because they are powerful, yet easy-to-use.

However, there are very good handhelds that use PocketPC (aka Windows Mobile) or Symbian, or other OS's (Blackberry as well). If you have a local Best Buy, go to the store, and try some of the devices they have. The chain has a return policy that may help you try a device and return it if unsatisfied.
If you are looking at a great Personal Digital Assistant (PDA), I would look at the Palm Tungsten T/X (retail $299):

Symbian is less of a generic PDA OS than Palm or Windows, it's out of question.
Between Palm and Windows I pick Palm. The devices are better designed to scale up as needed. But I do be picky about it being OS 5 (XScale/ARM) machine.

I was a long time Palm O/S user (Palm Pilot PDA, then Treo 600 phone) but recently switched to Windows Mobile 5 (imate K-Jam phone). If you use Windows at home and/or work, you will find the usability and interoperability of applications (Outlook, Word, Excel, Powerpoint, etc.) very easy and useful. Synchronizing between your handheld and computer is very easy. I'm much happier with my Windows O/S handheld.

I have used bouth, and prefer WM and Palm OS, and prefer Palm. YMMV.
