When I saw this question, one episode immediately came to mind.
It's the one where they are in California, and Lucy sneaks into Cornel Wilde's hotel suite. Not only was Lucy hilarious coming down off that balcony, but Ethel (trying to distract Ricky by giving him a cake recipe), kept getting more and more hysterical because she knew Lucy was going to fall. Vivian Vance had some of the best comedy scenes in the series, and this is one of my favorites.

When Lucy and Ethel went to work at the candy factory, an episode that was duplicated quite well on an episode of Laverne and Shirley.

Has got to be the one where Lucy gets a short wig and trys to make Ricky think she's someone else and Fred plays along and Ethel dresses up like a Chinese Eskimo, OMG just thinking about that one has me in tears...What A GREAT show.

I would never be able to select just one. I still laugh at the chocolate factory and vitameatavegamin. I loved when they went to Hollywood and met the stars like Bill Holden. If you listen very carefully, sometimes you will hear Dezi laughing in the background at Lucy's performance on certain episodes.

My favorite "I Love Lucy" episode is the one which provokes extraterrestrial forces, located in one of the star systems below, to invade Earth - in order to stop all these infernal radio transmissions :)

I like the Candy Factory episode where they can't keep up with the conveyer belt. Also the "vitamin" comercial.
