I think the GS 750 head is the same and you can get some tuning parts for that (cams, carbs, etc)
I think you may be able to fit the later GSX 750, (GS, USA , not the 'R' models) 4 valve per cyl head for better performance, I'm not sure stud spacing is the same on 1100?
You need to take a couple of measurments of stud/cylinder spacing. One of the Kawasaki heads/cylinder combinations will bolt straight on and you can get watercooling, have to use external water pump but over 300 hp is possible using pump gas, 93 octane ( with turbo etc, but I forget which one, sorry)

Valve size is smaller and tgherefore less power
