crayola finger paints... they only paint on the paper...
get a big box... they love boxes... this would entertain for a long time... trust me, my son used to toss the toy away and climb into the boxes at christmas.
sing songs and dance to barney and wiggles videos...

If you are planning on babysitting for sometime, you can make yourself a babysitting pack to take with you on your sitting jobs.
You can bring some washable markers with you and some freezer paper. Sit at the table or on the floor and color with him. Say the colors as you use them so that you are teaching him at the same time. Play as well as color. For instance, put the orange marker behind your back and say, "Oops where is the orange one?", then bring it out from behind your back and say, "There it is...!" Hide the markers in the family room or ask him to help you hide them and then you ask him where the blue one is and to bring it to you, or the red, or yellow.
You could also have some Pay Doh that you could work with him. It would teach him dexterity. Keep an eye on him well though as they tend to put new things in their mouths at that age.
Keep a few books in your bag to read to him. Popup books or books that teach are excellent. If you are reading him a story about balloons, have a few balloons with you. If you are reading about the 3 bears, have 3 little bears with you or draw them with him using the markers.
Take him in the yard and ask him to show you the birds, clouds, house, grass, etc.
With a 2 1\2 year old you have to keep their attention by changing subjects and actions often. It's always best to have a 2 way exchange with them rather just one of you doing it all. Also at that age their mind is like a sponge so teaching as you play is very, very good.

Check out this book from the library, it's called the Toddler's Busy Book by Trish Kuffner. Lots of great ideas in it. Should keep him plenty busy!!

macaroni noodles for necklaces or portraits, playdoh ,alphabet blocks to stimulate his little mind and encourage spelling, flash cards for math and numbers those little plastic things you hook together to make like snakes and stuff those are really cool and some crayons the ones that don't stain so he can 'doodle' there are a whole lot of things you might also want to check out fisher-price.com for more ideas....have fun

coloured ice painting. put food colouring in water and freeze. when frozen, let him "paint" the driveway with coloured ice. goop - but a pack of cornflour. pour into a large bowl. slowly add small amounts of water and stir until it turns into a liquid that is hard to move. this is the consistency you need for goop to work. you really don't need much water at all. likely less then a quarter of a cup. when you press your fingers on the goop quickly, it will feel like a solid. but when you press your fingers on the goop very slowly.. it's a liquid!! amazing!! it's heaps of fun. your kid will love it. add food colouring to make it even more exciting. playdough. buy a pack of Cream of Tartar and follow the directions on the pack to make playdough. make it fun buy adding things such as glitter, food colouring, flavoured essence, cocoa for choc smelling playdough, mint, try freezing the dough and letting your child knead it when it's really cold. make balls out of un-coloured playdough, and "hide" a dot of colour in the middle of each ball. now let your child knead the dough and discover the colour! now let the child mix the balls of colour to discover what colours he/she can make. giant murals. use tape to stick 4 or 5 sheets of cardboard together to make a giant sheet of paper. now give him some paints. use plastic cups with water in each, add food colouring to each cup. give all the colours of the rainbow. hang the giant paper against the house (or lay on driveway) and give him/her some cotton swaps to paint with instead of brushes. when it's finished he or she will have a delightful home made mural for their bedroom :)

They have water based paints available for fingerpainting...this is easy to do and fun for them. And the artwork is always one of a kind.
