Service of the cooling system is important because water contains oxygen, and the engine contains metal, all kinds of which oxidize (rust).
Coolant will be effective as a rust inhibitor and keep the operation of your cooling system in good order as long as it doesn't get too old. Most car manufacturers and coolant manufacturers recommend not over 2 years old. If there is rust, it reduces the heat transfer of the system. If you take the radiator cap off, and you observe little white globs and flecks, that is called "fall-out" and it is part of the chemical content of the coolant no longer in suspension in the coolant.
Ultimate coolant it 50/50% mix of coolant and water. Never use much more than 50% coolant, as it decreases the effectiveness and the ability to withstand the system's action.
Brake fluid is hygroscopic--which is a big word for it absorbs water. Water in the brake system --
1) will allow metal to rust
2) Is not stable under extremes of heat
3) will expand under extremes of heat and possibly cause the brakes to drag
4) Can freeze in extremes of cold causing the possibility of loss of brakes altogether.

Many more reasons, but these kind of give you the idea.

To clean the fluids. Mainly the brake fluid. As it gets older it picks up moisture from the air and becomes less effective and can lead to soft pedal or brake fad on long down hill drives.
The coolant also gets dirty. It can brak down and leave deposits in your radiator over time. Unless you see something in the coolant I would just change it out not flush it. On the brake fluid it is a good idea to bleed all the old out. Good luck.

I've never heard of flushing your brake fluid. I would recommend flushing your radiator every 50K miles (more often if you live in a climate that is extremely hot/cold and makes your coolant/anti-freeze work overtime).

Hi, if you drive your car every day, I recommend to flush your colling system once a year and replace coolant.
Brake fluid should be replaced once a year also.
