A simple case of genetics-- his father had white hair & so does his 1/2 brother Sesshoumaru. The white hair represents his demon heritage and on the night of the new moon when he loses his demon powers , his hair becomes black like his human mother. I guess his father had the dominant genes !

Inuyasha inherited his father's demonic powers and heritage. He looks very much like his father with his white hair. Also, when the new moon begins, he reverts to his human form and resembles his mother more.

Inu-Papa had sliver hair. Fluffy-sama has white hair... Fluffy-sama's mama has white hair. Maybe dai-youkai dogs have silver hair. The color of his hair come with the demon genes... *fluffy sama*

Its supposed to be silver. It just doesn't transfer from paper to video right. Many episodes refer to his silver hair.
