The same reason some people say rattlesnake taste like chicken and but like catfish.
I under stand cow birds(which are illegal to eat, and armadilla taste like chicken also.
Some parts of turtles taste like chicken. It's evidently a favor nature liked.

Because, no matter what emu looks like (I haven't had it myself), emu is nothing but a huge chicken.
