Michael Nyman - the theme from the film The Piano. A beautiful piece that always makes me cry. Closely followed by Beethoven's Moonlight Sonata. Favourite composer is actually Beethoven.

My personal favorite (at least at this time) is "Cast Your Fate To The Wind" by the Vince Guaraldi Trio. Yes, there's bass and drums in there as well, but Guaraldi's piano work is stunningly beautiful. This is jazz for people who swear up and down they hate jazz.
