Time signature change is generally used to create emotion or excitement at a particular point in the song. It is a type of 3-dimensional music in that it can help bring to life the lyrics or music in a very real way.

One of the most successful time signature changes was used on My Way, Sinatra's signature song. The verse is a simple 4/4 time, and the chorus erupts into a 6/8 beat that conveys the increased emotion of the lyrics.

To make a smooth time signature transition, it is best to change from verse to chorus, (like My Way) or a-la Zeppelin's Stairway to Heaven, divide the song between first and last section.

Mariah Carey commonly changes time signatures on a title line in the balance position of a chorus (e.g., I Wish You Knew from her last album).

You oughta listen to some good 70s prog rock for examples.

Any Rush song from their "Moving Pictures" album may give you a clue, but esp. "Limelight", "Tom Sawyer", "Red Barchetta", "Spirit of Radio"....
