It seems you are asking two things. How do you know a person is intelligent? and How can you understand an intelligent person?
I guess the first question is easy. If you don't understand them, they may be more intelligent than you. They also may be better at faking being intelligent than you can pick up on.
So, how do you understand a more intelligent person? First, listen and do your best to understand. When you get to something you don't understand, ask, "What do you mean by...?" and repeat what they said that you don't understand. Just say, I'm not getting what you are saying about ... and mention something they said. Ask if they will illustrate what they are saying with an example.
Asking questions slows them down, gives you more time to think about what they are saying and makes them repeat so you can retain better. If done respectfully, it makes the person feel that their intelligence is respected and appreciated as well.

For most people it is quite obvious if they are dealing with an intelligent person. If you have a problem with this, you need to practise your listening skills.
Assume that the person is intelligent if you are in any doubt, you will offend less people that way.
If the problem is that you can't understand the intelligent people because they are using words you don't understand, then I would suggest that they aren't intelligent enough. Otherwise they would know, that the best words are not the longest but the clearest.

Don't ever be intimidated by real smart people....if they are nice, they will put it in layman's terms for you....if not, simply ask, "could you say that again in a way that I can understand." Most real intelligent people are kind and want you to understand......so don't be embarrassed....this says more about them than it does you.

Seriously? Strong feelings and opinions, but yet, an open mind tell me that this is someone who is of reasonable IQ.
