How would you rate the trip; clean? food? bedroom
option? What about winter travel, any particular problems?

I had a friend who took the trip with her little girl, they liked it. I believe they sprung for a sleeper.

I did that trip about 6 years ago or so and they were supposed to build the "Empire Builder" line the following year. It was supposed to be their top of the line cars, faster, quieter and smoother.
The trip out was great, I wished I would have gotten a sleeper car though. Meals are served from the nearest car to the dining car to the rear of the train. We were the second to last car, so if they didn't run out of food, we ate at 9-9:30PM.
We never got to use the observation car, people were sleeping in it, hogging the seats and never leaving.
The trip back was awful, no food, the cars were dirty and the staff were crabby as hell.
We complained about that and got some money refunded.
All-in-all it wasn't a bad trip.
