Doe anyone know of a good company that recycles ink cartridges for school fundraising?

Staples and Office Max recycle cartridges, but I know for sure that Office Max gives you certificates for each one turned in. You must spend the certificates at their store. Ask to speak with a manager and see if they can make an exception because it is for a school. Otherwise you can use the certificates to buy materials and supplies.
