Before the Battle of Agincourt in 1415, the French, anticipating victory over the English, proposed to cut off the middle finger of all captured English soldiers. Without the middle finger it would be impossible to draw the Renowned English longbow and therefore be incapable of fighting in the future.This famous weapon was made of the native English Yew tree, and the act of drawing the longbow was known as "plucking the yew" (or "pluck yew").
Much to the bewilderment of the French, the English won a major upset and began mocking the French by waving their middle fingers at the defeated French, saying, "See, we can still pluck yew! "PLUCK YEW!"
Since 'pluck yew' is rather difficult to say, the difficult consonant cluster at the beginning has gradually changed to a labiodental fricative 'F', and thus the words often used in conjunction with the ne-finger-salute are mistakenly thought to have something to do with an intimate encounter. It is also because of the pheasant feathers on the arrows used with the longbow that the symbolic gesture is known as "giving the bird." :)

I learned this from a history channel show a few years ago. The middle finger as we currently use it came from archery culture during the medival period. Archers were the backbone of most military forces; both mobile and able to attack with stealth. During wars it was common to cut off the two middlemost fingers of your opponent, leaving that archery useless in combat. It became a common insult by an archer to thrust those fingers at an opponent as a symbol of their impotence, and evolved into the one finger salute we all know these days.

During the 17th century, the French and English Wars, a French General declared that any long bowman Englishman captured was to have his middle finger cut off so he could not operate his bow in battle. The bows were made of yew wood and feathers and during the battle the English became victorious and held up their middle fingers and yelled to the French "pluck yew" and shot off the long bows at them.

It was from people a long time ago who used a bow and arrow. They used the middle finger and index finger and somewhere along the way the word pluck was used, therefore you have the use of the middle finger and the word pluck was shortened to f**k.
