I use leaches with just enough weight on to get them to sink but not restrict them from swimming around. Let them wander with a loose line and watch for it going for a walk.
A

What kind of fish are you refering to? Catfish for instance love stink baits and chicken livers, while Bass and other assorted Sunfish enjoy everything from Minnows to Worms.

It really depends

alrite this is how i catch fish when i go fishin and i go quite frequently so...:
Carp: i make a cornmeal which hconsists of cornmeal, flour, water(or fruit juice), sugar, and strawberry jello pack..works great!
Catfish: pretty much anything smelly and dead..lunchmeat, hotdogs, pieces of fish meat, and the cornmeal also works good for catfish
Bass:i put a bobber on my line with no weight and have a worm on the hook about 1.5-2 ft under the bobber and slowly reel it in..bass love it!!!

with blue gills i use either minnows or leeches. just make sure you bait the hook right so the fish can't pull the bait off without getting hooked.

For catfish an old timers trick is to spray WD40 on your bait. No lie! it works too. Stinky shrimp, or rotting chicken liver with WD40, mm mm good.

it depends on the inviroment, lake, river, ocean. look at the native bugs, worms, etc. and use. trout love those flys, i found carp loves corn? and for some reason salmon like the roe??

hot dog pieces work well for sunfish, bluegill, and bullheads. I've also had good luck with buttered peas! (might need a small sinker with these)
