Because you don't have to deal with the other sides issues .. so it looks better over there ... Like looking in a window of a home that is sitting down to dinner .. It looks nice and serene from the out side BUT you don't know that they are arguing over the kid getting bad grades or not trying hard enough of a bill didn't get paid .etc.. The grass is always greener on the other side .....Because you are on your side looking at it FROM the other side too

If you look at the grass from above, that is to say that you are looking down onto it. You will see a combination of soil and grass which make's it not so green. But if you look at it from a distance you tend see all grass and that's why its greener on the other side. Its all an optical, psychological illusion, if you like.

Because colour seems to darken the further away you are from it.
So the green field a mile away on the horizon looks greener (darker green) than the one you are standing in.
In reality they are the same.

Because they got better fertilizer on the other side and more rain and more sunshine! The weird thing is I visited there on a vacation and it must have been rainy and cold there that week, the week I picked to visit it, because I am sure things were better where I had just come from.

the expression means that the other side that you haven't seen or been to always seems better. maybe once you've actually been to the other side, it won't seem that greener/better anymore.

No matter how good you have it ,you see people that have more.This triggers the want so when you want more than you have it's because the grass is greener.

look straight down you see the dirt
at an angle you see only grass
as for the metaphorical meaning
because distance lends enchantment to the view
