The Katina is actually the GSX 600. It was loosely modeled after the GS 550E. It was designed to be a sporty, but comfortable bike, that had a little more power than the 550 and was given a catchy oriental name, to counteract the popularity of the Ninja. It is a comparatively slow, and has an almost awkwardly high center of gravity. The x was added to the GS because it was said to be the GS X-treme. Now it is simply called the Katana.
Then came the GSX-R. The next level. Crouched riding position, with high engine output. Simply, the R stands for Races. It is popular with canyon racers because of the low center of gravity and tight cornering ability. It is easily modifiable for the track.
Look for the GSX-RRs. RR means Race Ready. You can take these bad boys out to the track straight from the showroom. They will be in competition with Honda's increasingly popular RR bikes.

A katana is more for the street riding with a little easier seating and a power band made more for riding on the road. While the gixxer is less comfortable to ride (for handling on track) and power band is tuned more for the track.

performance on a track is the major difference.
The GSXR would leave the Katana in the dust on the track (assuming riders with equal skills)
The Katana is more of a rider friendly bike.
