Gosh with one child, you need to go anywhere you want... Because as soon as you add to your clan, vacations are going to become even more limited.
Here is a link to a resort in San Diego that is on the beach. They have little kitchenettes and you can order room service. Plus while baby is sleeping, you can take your monitor out your sliding doors onto the beach.

We went to San Diego with our daughter. It was nice. Lots to see and do. If you want theme parks, they are right there, but there is so much more to do besides that. I wouldn't say it's "baby friendly" but I woudn't say it's not either.
Oh, and don't listen to the person who said not to take babies on vacation. If you are normal, you realize that the baby is a part of your family and therefore, he/she should go anywhere you go. It's not hard at all. It was actually a lot of fun to take a baby on vacation.

Dallas/Fort Worth area in Texas. The Fort Worth Zoo is one of the largest in the US and I lived in Texas for 15 years. You could also try San Antonio, Texas. A lot of fun for all ages! I visited there several times since I was about 8 and my sibilings were 3 and 4. It's great and there are things for all ages.

St. Louis Missouri would be a good place to vacation, if you just wanted to get away for a couple days. They have a great zoo, Grant's Farm, the Arch, Botanical Gardens. Lots of cool things a one year old would enjoy seeing.

A one year old will love going to the Zoo, Aquariums or just wildlife out in the country. The hotter it is out the less your baby will enjoy it and be very irritable so try to do things where you can take plenty of breaks in the shade and eat icecream or snowcones.
Camping, Fishing is also fun for a one year old or atleast my daughter likes all these things to do. She is an absolute nature seeker. Loves all animals, water, trees, leaves, sticks, hills, tractor rides.etc.

Baby on vacation does not work. Babies are too young. Leave Baby with Mother-In-Law and go without Baby. The people around you will appreciate it. It is Abuse to take babies to NYC in summertime - to beach because of dehydration and sunburn, to disney land or world because they are too young to safely ride, remember or enjoy the trip. Think about the baby and then leave it home.

1 year is a bit young. They are easily amused as they are not quite as mobile. All you need to do is go somewhere that he can look around.
