It's not a question of trust, since fermentation is a natural process. I will say that my view of "recreational drugs" has been for a long time that if god made it, it is good. If man made it it is bad. Marajuana and Mushrooms aren't the devils that the phamacutical lobby and the government surrogate moms would have you believe, but I wouldn't want Cocaine, LSD and Heroin available at my local 7-11 either.
Just remember, the two biggest "gateway" drugs in reality are alcohol (beer) and nicotene, and that's a FACT. I never knew anyone who smoked pot who didn't try either of those two legal substances first.

God set up the conditions for all things to exist .God did not make plasma screen T.V.'s but we got them . Can you imagine being the first person to have consumed fermented wine that was not done intentionally .
I magine having so much that some of it went bad and then you tried to pawn it off as fresh and the people still liked it and wanted more .
SO hording created wine and from this method people tried all sorts of combinations to make alcoholic beverages .some people died
JUST like today , from not being in there right mind .

I live off of my favorite drink: Vodka and coke...hold the coke.
