In the comedy world it's like a lifetime achievement award. Everyone comes together to "honor" one of their own who they consider one of the greatest.

It is a good time for all. People can make fun of each other knowing that none of it is serious.
Personally I find that the roasts that are currently available for public viewing are mean and not very funny. Dean Martin always had the best roasts, and the Friars Club roasts are OK, but still pretty lame. The latest Comedy Central version of the roast format seems to consist of no-name celebrities or has bens and no one seems to know how to tell a joke. They all come across as barely smart enough to read the teleprompter without forgetting how to breath between sentences.

The point is to help humble people who otherwise are so caught up in themselves that no one can stand to be around them. It is an irreverent look at someone's accomplishements and helps ordinary joes relate better to celebtrities.
Althought when they originated, they were secret rituals where someone was "roasted" in their absence.
