It doesn't.
On 12-21-2012, the 13th Baktun of the Mayan Long Count calendar begins. That's like our calendar going from 1999 to 2000 except that a baktun is 396 years long. Some people have decided the calendar can't go beyond 12 but that's ridiculous, it can go up to 20, and if it gets to 20 there's another invisible place to the left that can go to 1. (The Long Count is like a speedometer.)
BTW, the Maya aren't extinct. There are millions of them living in Mexico and Guatemala.

The Mayans believed that there were numerous times before in which the apocalypse has occurred. The last time, humanity was supposedly resurrected by Quexlcotl, the serpent god. They marked off the time they had prophesized since the previous supposed apocylypse and projected that the next one would occur on Dec 21, 2012.
That doesn't humanity is done for, though. It just might be a new beginning. I suppose we'll find out in 6 years for sure.

So many of the different calendars say the world will cease within the next 300-500 years.

Because they did believe that about every 10 000 years the Earth has to go through changing process. I am not sure what exactly should happen during that period of changing but you can check Ancient Egypt on that mark
