It's a science fiction novel about an alien invasion of earth. Part of the invasion involves terraforming the landscape for their use. A pink foam (or snow)-like mold substrate is planted. In addition there are some kind of carnivorous bunny-like creatures (they eat people). I read this book a long time ago and it was one of a series. I also remember a chapter near the end where one of the main characters has a car crash and the bunny creatures attack him.

The Year of the Angry Rabbit - The movie the Night of the Lepus was sort based off of this book. Don't know if it is the book you are looking for though.

It sounds a little like THE TAKING by Dean Koontz. It came out in 2004.If its not the one you are looking for, and you liked the other,you will like this one. Very hard to put down.
