If you like intelligent anime, try :
Neon Genesis Evangelion, Ghost in the Shell (original, and Stand Alone Complex), Akira, the new Appleseed anime (2004/2005 version), Samurai Champloo, and the original Ninja Scroll.
If you like candy-fluff anime, I suppose you could try Naruto, DBZ, and some of that other stuff they have on the Cartoon Network @ 1 a.m.

Well, I for one would look no further than Cowboy Bebop, which is considered among the best anime out there. Samurai Champloo is done by the same creator, and while it isn't nearly as good as Bebop, it's still very well-done. These two shows combine certain themes with rather unusual choices in music: for instance, Cowboy Bebop combines sci-fi with jazz and blues. Samurai Champloo combines historical fiction with hip-hop (this combination, in my opinion, works rather less well than the one in Bebop, but it's still good).
For other anime, I would recommend Bleach. For the first twenty episodes the plot is rather repetitive, but after that, the plot really picks up and things start to get very interesting.
I've also heard that the anime Monster is good. I'm not entirely sure, as I haven't seen it, but it is a drama that is apparently very good, and very creepy.

I don't know that there is anything quite like Fullmetal to be honest. I think it's pretty unique. You could try Chrono Crusade. It's one of my favorites. I also recommend Lunar Legend Tsukihime. It's short, but also very good. But don't despair, you could read the FMA manga if you haven't already, and of course there is the movie too. ^_^

Definitely Naruto! I fell in love with that show! It's the coolest! And it's funny! DRAMA, COMEDY, ROMANCE -but not too much- SUSPENSE! GAARA!! WHAT MORE CAN U ASK 4?!?!
