Absolutely!!.. we bought one last October to use for hallowe'en, and never got round to doing anything with it, the skin was too hard to cut so I just left it on a shelf in my living room... by christmas it was just right for cutting up and made the most delicious pumpkin pie..
any sort of squash will continue to ripen off the vine so long as it isn't in a damp place...
