Well that depends. Are you selling the actual product or would you want to sell the "recipe"? If you sell the "product" you need to take it very slowly. Demand is a great thing unless you can't supply the hopefully growing demand. Example: if you put up a website and you sell 100 packages per week but your capacity is 250 packages, then you are underselling. Now let's say you want to expand your market, to make more money. So you go to a local health food store. Now they want to buy 100 packages per week. You are up to 200 packages...your capacity is stilll 250. You further your quest for more money and decide to hit up some national chains. They love it and want to buy 1000 packages per week. Will you be prepared for that?

If you sell the recipe, I would go after the big chains and for a big, price and royalties.
