Believe it or not, that jump was real. Well, the S2000 did the jump under remote control because its suspension was so stiff they worried a stunt driver would be injured, but the rest of it was real.

Here's a real doozie: The way the drivers used nitrous oxide in the first one. The best strategy for using it is not to wait till you're losing; it's to engage the nitrous as soon as you are moving fast enough that it won't spin your tires. You can do a few acceleration estimates assuming it gives the car 100 extra horsepower and the driver has brought enough to last the entire race (given that Paul Walker was showing off that he had 20 lbs of the stuff in chrome-plated bottles, he'd better have!).

Another good one: Remember the flying floorboard in Paul Walker's green Eclipse? Try drawing a free body diagram for it and figuring out what could possibly have made it do that.

Not quite physically impossible, but the gauges shouldn't all go to redline when the driver turns on nitrous oxide. Unless they're very miswired or the driver is running three nitrous flow gauges!

Stunts I know were faked include the scene where they jump the Camaro onto the boat (it was suspended from a wire) and a lot of the glowing brake rotors (done with LED's).

Also, check out this web page:

It's about Insultingly Stupid Movie Physics. They haven't reviewd any Fast and Furious movies, but they do cover some mistakes that showed up there.
