The reason you get a choise of sald or soup..... is so you can start to eat something right away. Most people are very hungry when the go out to eat. So by giving you somehting from the get-go you are entertained (by your soup or salad) while you wait for your meal.
I don't know why you refer to it as insisting though. I don't eat salads and i never once was preasured into getting somehting i didn't like.

MAYBE you should go elsewhere where they will treat there customers a bit better??

To give the perception of value. If you are in Europe and get a salad it is a proper salad, not just a shrivelled bit of Lettuce and an eighth of a tomato.

Check the frickin' menu, it probably comes with a salad. If you didn't want the salad, you should have told them "no salad". Heck, they might have even taken a few cents off your bill. but remember, salad keeps you "regular", so don't "dis" the salad, mate!

It is meant to be a garnish for the dish as most chef's have'nt a clue they stick on some so called salad.

Because they are convinced that if they put salad on the plate it automatically makes the starchy, greasy, fatty, unhealthy meal HEALTHY. It is what helps them sleep at night:)

Tell them if you don't want the side salad, or see if you can swap it for something else ... but hey, salad is good for you! They just want to make sure you stay healthy so you can keep coming back!

It is a cheap way to fill the plate and make it look like you have a large meal in front of you.

i started off working in pubs. most of the time its just a garnish. its added in to the price. you either eat it or leave it. but you paid for it anyway.
