That is an interesting question... but it has a very logical answer. It can be assumed with great likelihood that people, no matter how uneducated, will be able to identify their own state. That being the case, a simple analysis of population should yield you a fairly scientific result. According to the April, 2000 census data:
California 33,871,648
Texas 20,851,820
New York 18,976,457
Florida 15,982,378
As those four states are also very popular in the news within the rest of the country, it is fair to suffice that they are about equally recognizable to the population of the remaining 46 states.
As California has a population slightly larger than 13 million of the next most populated state, Texas, I would have to say that statistically, to the American, California would have the most recognizable shape.

I hate to go with the crowd, but Texas sticks out in my mind as well. I don't think Florida and California are far behind. Someone said New York, but the shape of that state doesn't strike me as memorable... Alaska and Hawaii are the only other ones that I can think of that I would recognize right away, no thought required.
