I'm not sure about song, but surely the best acoustic album was Nirvana Unplugged?

Not a massive Hip Hop fan but Jay-Z unplugged with The Roots backing him was awesome.

Keane did an amazing version of U2's "With or Without you" on Jo Whiley's live lounge (i think).

Absolutely beautiful and i'm not a Keane fan in any way.

Brought a tear to my eye - i didn't think the song could be more moving than U2's version but this is gorgeous.

One of the best acoustic tracks is 'i won't share you' by The Smiths. It's taken from their last album 'strangeways here we come' and was recorded shortly before they broke up.
It's rumoured that Morrissey's lyrics were directed at guitarist Johnny Marr after communication began to break down between them.
