Tell them to take it someplace else.
You don't have to be judgemental about what they're doing, but it's your bar so it's reasonable to have some limits on what is acceptable behavior.
By the way, chances are that's why your long-time customer became your new employee.

Digital surveillance camera systems are a standard feature now in most restaurants and especially bars.
Top quality PC based DVR systems with 8 cameras are now available for as low as ~$2500+labor at www.wynpay.com. They can also provide you the Internet connection into your bar/restaurant and set you up with remote Internet surveillance.
Standard 4 camera deployment involves watching the two doors (front and rear), the POS/Bar POS machines, and the general seating area. The rest of the 4 cameras can be deployed to watch important areas such as storage/freezer, another POS counter and a couple external (if stand alone or drive through etc).
A couple of the top reasons for installing a PC based DVR that can be remotely monitored via the Internet include not only loss ($$$)prevention but also to watch for bad employees and their behaviour/interaction among themselves as well as with customers/clients.
This installation for about $399.99 would then enable you to not only retain the employees but also prevent them from any hanky panky stuff while on or off duty on the premises. What they do outside of your business premises is none of your business anyway.
Wynpay works in tandem with eBolo Communications that can get you the best deals for bringing DSL or T1 internet and relevant features to run your Internet based applications. Call me if you need any help.
Good luck.

I would casually inform them about the New Hidden Surveillance Camera you installed last month "For Security reasons", and tell them you found some very interesting clips after reviewing them. Don't mention what you saw, they will get the hint. Good Luck ! Be creative ! Smile, you are on Candid Camera !

If it is difficult to find a replacement, why worry about it?
If they are not making a mess, not doing it during work hours, completing all the work tasks, why bother with confronting them?
Otherwise, you can install a video camera system and tape them. Then sell it on the internet to cover any lost revenue.

Just tell them you know and ask them to go somewhere else if they want to have sex after work. I'm not clear what the problem is here - they are likely to be more embaressed than you.

I would suggest to them that perhaps a hotel would provide the privacy necessary for their meetings after work.

Tell them that what they do on their own time is thier business, so long as it's not in your bar.

BE UPFRONT & IN THE FACE.
THEY CANNOT HOLD U RANSOM JUST BECAUSE THEIR TALENT IS IRREPLACEABLE.
ALWAYS REMEMBER THAT THE ORGANISATIONS INTRESTS COMES BRFORE THE INDIVIDUALS INTERESTS. IF THEY CANNOT RESPECT THIS, THEY SHOULD NOT BE PART OF YOUR SYSTEM.
PERIOD.
