in olden days they swung a lead weight out in front of the boat and tried to have it hit bottom as they passed over it and then count the fathoms (6 feet) as they hauled it up
they covered the lead in fat to see what stuck to it to give an idea of the bottom composition (sand, mud, coral etc..)

It is called a Fathometer, or Depth sounder. There are many types on the market today. Ther are some that also serve as a fishfinder.
