The sentence is "How many letters have you written since this term began?"
Should I add "began" or not?

"How many letters have you written this term?"

the words "beginning of..." seem redundant.

How about since this term started or since this term began how many letters have you written.

try "How many letters have you written since the beginning of this term?" maybe that'll work better?

How many letters have you written since the begining of this term?

I would say that it zero's the time in question, but is not required in completion of a thought conveyed to a complete sentence.
