Cool season crops... of course this depends entirely on where you are doing your planting and just how cold your winter temps get to be.

radish, turnip, cabbage, celery, lettuce, onion, spinach, broccoli, cauliflower, globe artichoke.

And garlic, planted now for a spring crop.

Beets. Plant any time from February to April for spring crop, in late August or September for fall crop. Rows should be 24 to 36 inches apart. You can use double rows 10 inches apart, with each double row 36 inches apart, if space is limited. You can also do this with carrots, lettuce, onions, radishes, English peas, and other early crops.

You can plant garlic now. I have also just sown more salad leaves and spinach for winter crops as well as basil, coriander, rocket. I'm lucky to have a greenhouse to keep them in but if you start seeds off in an airng cupboard - you can then grow them on a window sill. Don't be put off instructions on the packets as to when you can sow seeds - just have a go at anything at any time and you'll be surprised at what can be grown - especially as our seasons are now changing.

Onions, leeks,and a late crop of potatoes. Depends if you are planting outside, in a greenhouse or in a cold frame. Also depends where you are, and what you like.

All the Brassicas (broccoli, cabbage, cauliflower, Kale) spinach, any other cool season veggies which grow where you live. In Florida they are planting tomatos as it is too hot in the summer for them.
