the doctrine of sovereignty means that each country has the right and power to control its own affairs. This is loosely traced back to the Treaty of Westphalia (1648).

I'm not sure what your question "what laws are subject to this" means exactly. If you mean "what laws are influenced by the doctrine of sovereignty", well, all of them. Any law made by one country has no effect outside its borders.

If you meant "What laws are exceptions to the doctrine" then, countries can make treaties with each other to limit each others' power. International bodies like the UN or EU can also make laws binding member states. The problem with this is that members break these laws all the time, but a country cant get arrested and dragged to court to face punishment, so the laws lack teeth. They rely on members following the laws in good faith.

From a not-so-legal perspective, citizens of a country should be deciding what their government do. If a different country interferes, the citizens lose control of their situation.
