I just bought a new set of sheets (300 thread count) and they started pilling after just two or three washes. What can I do to stop this from happening in the future?

What does the fabric consist of? Are the sheets 100% cotton or 50% cotton and 50% polyester. Sheets that have a combination of materials will pill more than 100% cotton. Sheets that are 100% cotton should never pill.

buy higher thread count sheets. they are more expensive - but the more they are washed the softer/better they get. without pilling.

Buy higher quality sheets. Or hang them to dry, that might help.
