This phrase comes from medieval times, when piglets were worth more than cats because you could raise pigs for food. People would try to fool other market goers by putting a cat into a bag, and trying to sell it as a pig. The smart buyer would ask to see the pig, and if the pig was in fact a cat, then the buyer has 'let the cat out of the bag' and so let out the secret.

A favourite country trick used to be to substitute a cat for a pig at markets. If you let the cat out of the bag you disclosed the trick - and avoided buying a pig in a poke (bag).

It means you told something that was not supposed to be told. For instance, if someone was planning a surprise birthday party and you said something to the birthday person to let them know that a party was being planned.
