It is often difficult with "to be" and "to have" to tell whether a participle is to be construed as an adjective or a verb. You have to look at the sense of the sentence. Your "prejudiced" is an adjective, a predicate adjective. This was not a hard case, because we have a present-tense "am" and a not-present-tense "prejudiced". If it had been "I was prejudiced against women", there would be a problem, because you might be saying that something caused you to be that way, in which case it would be a verb: "I was prejudiced against women [at an early age by my father, who had done time for domestic violence]." You could also mean that you used to be that way, adjective: "I was prejudiced against women [before I met Daphne]." (Me, I'm prejudiced against pit bulls and their owners.)
