why do wet beans germinate?

Like most large seeded crops, beans require a moist soil for germination. Not all wet beans do germinate. Some might rot or get a fungus growing on them.
For germination, the beans must have been gathered and stored correctly. It must then be placed in the proper environmental conditions, which include the correct amount of moisture, proper temperature, and ample oxygen supply.

When a seed (or bean) comes into contact with enough water and the right environment for germination, the water activates enzymes inside of the seed. These enzymes would start to digest the nutrients provided by its cotyledon or endosperm to provide energy for the growth of the plant or germination to become a seedling. As a result, mitosis would occur together with cell differentiation to result in the growth and development of the plant into a seedling, producing a radicle (roots of a germinating seed) and a plumule (leaves of a germinating seed). Very often, the leaves do not start photosynthesising right away, but after the nutrients in the seed are more or less depleted.

All seeds start a process called germination when they get wet. Remember that a seed is a living organism that is just waiting for the right environment to start developing. When the seed absorbs water, a series of physiological events start in order to create a new plant. All living things need water in order to grow and survive.

When you plant a seed, it only needs water and very few minerals to produce the begining of a root and a stem. When plants first germinate, the first mission is to try to find a light source (the sun) by shooting a stem out of the ground and a mineral source (the soil) by shooting the roots into the ground. Once the plant has found that, then the plant can continue to grow forming leaves and flowers etc. . Unfortunately if the plant does not find the two sources, the seedling will die.

The water absorb will activate the embryo to grow.
