Maybe it is because we all associate white with doctors, science and cleanliness and thus, we think our hair must be nice and clean now!

It's a marketing thing. White is automatically associated in the general consumers mind with clean. It would not sell as well if it lathered any other color.

Actually they are not all white, I have used shampoo for color treated hair with the tint of whatever color your hair is and the lather is that color. Example:black hair, black lather.

they aint all white cos i have seen pink lather an i have also seen yellow lather off iodine shampoo for scalp conditions

really? when I wash my hair the lather is blue. although that might have something to do with the dye.....

Becuase the colourings of shampoo become so thin, the seem white,. same as bubble bath etc

Becuase the othre colours may stain... I don't know!! I like the thick white, lathery stuff ;) dont you?
