You could spend time with a chef learning the more complicated aspects of cooking, how to choose ingredients based on best quality and price, appropriate temperatures of different meats, weights and measures, acceptable substitutions for liquors or hard to find items, etc.
You could find someone who knows firearms and learn the history of firearms, when the different types of firearms where invented (rifles, shotguns, pistols, muzzleloaders, etc.), what wars the types were used in (e.g. certain type of muzzleloaders in the Revolutionary War), what type of gun is needed for particular purposes today (e.g. military use, law enforcement, personal protection, recreation, hunting various types of animals), firearm sports (Olympics, 4-H, NRA), advantages and disadvantages between guns with rifling and smooth-bore guns (shotguns), types of amunition, etc. Then maybe you could spent some time at a shooting range if you know of one.
You could contact the EPA and do a project on hydrology and pollution.
You could do one on automotive efficiency, what makes cars run efficiently and save fuel.

O.K. My friend (if you want a stupid idea) learned how to belly dance
Another guy in class (who got an A) Sent out letters to family/friends who lived all over the US asking them to fill out a survey about their car. He compiled the info and did a report about familys and how much they spend vs. how big a car they actually need. He linked the info to average out how much oil is used daily in our country, and basically told us we were all doomed b/c of the way the ecomomy is going.

Caffeine you can buy at almost every single grocery store in the civilized world yet people use it to get so hyper it's essentially considered a drug.

haha i'm in the same dilemma as you.
I've narrowed it down to two ideas for now:
- compose a symphony
- build a boat
I think i'm going with the first one, because building a boat is a little more complex than it sounds
