It's a small chunk of pork lard. It gives a little flavor to the beans and also softens them during the cooking process. Don't be afraid!

Many answers here say 'bacon' but in my experience it is pure white. Pure white 'bacon' equals pork fat - lard. I'm no vegetarian, but to me that is gross!
