Kimchi, also known as gimchi or kimchee is a traditional Korean dish of fermented chili peppers and vegetables, usually based on Chinese cabbage. The word's archaic pronunciation was chim-chae (Hangul: 침ì±; Hanja: æ²è), meaning "steeped/submerged vegetable". However, since the pronunciation's drastic change, kimchi is no longer associated with its original Hanja (Lee 2000).
In Korea, kimchi is served with most regular meals but is also used as an ingredient in cooking, including kimchi jjigae (kimchi soup), kimchi bokkeumbap (kimchi fried rice), and other dishes.
Though there are hundreds of variations, most types of kimchi tend to have a strong, spicy, tangy flavour. Unlike western pickles, kimchi isn't usually very sour and tends to taste quite garlicky.

[KIHM-chee] This spicy-hot, extraordinarily pungent condiment is served at almost every Korean meal. It`s made of fermented vegetables - such as cabbage or turnips - that have been pickled before being stored in tightly sealed pots or jars and buried in the ground. It`s dug up and used as needed. Commercial kimchi can be purchased in Korean markets. It will keep indefinitely in the refrigerator.

I admit I like it. Well... I'll eat just about anything anyways. like pickles there are so many varieties . I spent a year in the country of the morning calm and i had to limit how much i ate because what i ate would make my body stink

I like to talk to the man who invented it.
Had to be a man, no woman would let something
sit in the ground for weeks and then eat it.
